Two years in retrospect

You had to be crazy to start an allergen-free artisan bakery 5 minutes by car from a village of 3,000 people. Crazy and crazy. We've been open for two years, with more energy than ever.

The decision to settle in the region comes from our desire to put our families first. The setting is magnificent. The pace, human. A wonderful place to flourish and raise children.

Two years ago, after a career change, we opened a bakery in Rivière-Hâtée, between the city of Rimouski and the village of Bic. The place is beautiful, inspiring. The breeze from the river calms our minds overheated by the ovens. At the front of the confectionery workshop, the boutique space, bright and with a rustic-chic character, showcases our breads. It is with this boutique that our adventure begins.

Gabrielle concocts the recipes she invented through testing and research. We are embarking on the exciting project of making bread that everyone will love. It took us a lot of customer feedback, comments and testing to get to where we are today.

We also needed some valuable help: a team that devotes itself body and soul, partners who believe in us, baking professionals who come to put their two cents in throughout the process. Bread is alive, it evolves, just like us.

That's why we launched the online store last September. Even if it's not yet very intuitive to order fresh bread online, we're responding to a demand that's very present everywhere, throughout the province: "I want to eat tasty bread, whatever my dietary constraints!"

Little by little, you trust us. The first among you saw our recipes and our processes evolve. The breads become perfected. The service becomes more professional. We know each other better, our bread and us, and we learn a lot thanks to you.

Then the Coop Alina, the Rimouski natural food grocery store, offers us a place and a counter in its space, right in the city center. It must be said that the beautiful Rivière-Hâtée estate is far from urban activity! The rain and snow discourage more than one from coming to get their fresh bread all year long.

So we are relocating our shop to Alina's and taking over the vacant space of the bakery to create a recipe development lab. From this lab emerge projects as varied as coconut milk caramel pots, the veggie burger bar for the summer public market, mueslis, seasonal fruit tartlets, mousses, icings... and many other surprises to come.

As the weeks go by, interest in our products grows. Natural grocery stores across the province are starting to contact us. Citron confit products are now distributed in more than 45 points of sale, from Montreal to Bonaventure, Sherbrooke, Trois-Rivières, Quebec, Saguenay, Baie-Comeau, Amqui, Matane and many others!

The online store follows this evolution. With a new look and better organization, it is easier to find the information you are looking for. We have added a blog section to share with you our recipes, allergen-free cooking tips and tricks, news, and many other topics.

Summer is back and with it, the Rimouski public market. Where we can meet our old customers and new ones. We blow out our second candle with emotion and gratitude. If we are here, it is thanks to you! And for that, THANK YOU!
