Some of our customers hadn't bitten into the crust for so long that they had forgotten the taste. We find that unacceptable. ☝

Hi! I'm Gabrielle, owner of the Citron Confit bakery. In my twenties, my allergies started to rear their ugly heads. At first, seafood, then eggs, fish, gluten, and so on.

I often tell the story of the time I made myself a tomato sandwich. You know when you're craving a sandwich with fresh, juicy tomatoes?

So I take out all my provisions, including my gluten-free and allergen-free bread bought at the supermarket (an important detail for the rest of the story!).

Then I prepare my sandwich. As soon as I put it in my mouth - to bite into it - the crust stays in my hands, and the crumb, all soggy, falls onto the plate with the rest of the sandwich.

I actually cried. I was desperate to find bread that tasted like bread. And completely distraught over my disintegrated lunch mess.

So I rolled up my sleeves and started doing my own gluten-free and allergen-free experiments!

From the flour thread, I realized that my bread was not bad at all. 💛

After three years of research and development, the idea of ​​opening the first allergen-free bakery in Quebec was born. I finally cut the ribbon in 2016 using my original recipes.

That’s the story! Today, Citron Confit offers more than 30 breads, snacks, desserts and other essentials to accompany breakfasts. We make more than 600 loaves per day and we deliver everywhere in Quebec.

I always say that Citron Confit is *our* bakery, not *my* bakery.

It's true, our breads are not cheap. 🍞

But per gram, you get what you pay for. Our breads are generous, nourishing, and there are several reasons to justify its price. It is always fair.

We are the only allergen-free bakery in Quebec to bake our breads on a baking stone. And we shape them by hand, one by one, never in series. The result? A perfectly crispy crust and a crumb that is as soft as it is sumptuous!

Since 2016, we have baked a lot of bread and made a lot of business!

  1. The number of times we could have set the bakery on fire can no longer be counted on the fingers of one hand. 😬
  2. At a health fair, a lady once spat out her mouthful because she didn't believe us that her bread was gluten-free – and yet!
  3. We baked thousands of mini cookies for events. So many that we got tendonitis.
  4. We did the show Dans l'oeil du dragon and we were victims of our success. The team just couldn't take it anymore, to shape and package. We almost lost our skin there. 😂
  5. We chose the name Citron Confit… but we don’t sell lemons! We didn’t want to call ourselves sansgluten.com, because when you’re with us, you forget about your allergies and intolerances.
