Citron Confit is a playground! We have FUN, we work as a team and we don't take ourselves too seriously. From the bakery to the office or the warehouse, everyone develops their talents. Creativity is master in our house.
All the “flashes” can be experienced. Oh and we particularly like to adapt recipes that people like (like the Nanaïmo bars), and recreate them under the Citron Confit label: always allergen-free. You can spend an afternoon testing and tasting, licking your lips – and fingers! ☝
We work with those who are professionally trained, those who have learned "on the job", those who are fans of catering, cooking, baking, arts and horticulture... When all these worlds come together, let us tell you that it creates an explosion of floury flavors!
It's certain that with a bakery in a corner of the country as pretty as Bic, right on the 132, it helps to make ideas flourish. Because life is too short to eat bread that tastes like cardboard... and to earn your living by finding it boring. 😋

How do our artisan bakers learn?
At school, we don't learn how to become a gluten-free and allergen-free artisan baker. So we learn it at home! Everything starts with the original recipes developed by Gabrielle, the bakery's owner. Recipes that we've refined, new recipes that we've adopted (we told you, we love creating!). 🙏
The differences? The ingredients of course, but also the texture of the dough. It doesn't react the same way: it's stickier, its rising time and its chemistry vary.
Yes, making gluten-free and allergen-free bread is an art! But our artisan bakers are quickly on their skates. It takes them a few weeks and that's it.
