Let's not lie to ourselves, it's not exactly the same to come to our counter and pick up a loaf of bread straight from the oven to enjoy immediately than to receive the bread the day after it's baked after a trip of several hundred kilometers across the province. However, there are tricks to make the pleasure the same , if not more.
What do I do when I receive my order?
For those you want to consume right away, you have 2 options.
Either you slice them and put the slices in the toaster. The delicious smell of the toast coming out should have your children running to the kitchen in less than 2 minutes.
Or you can put the whole loaf in the oven. 10 minutes at 350°F, this will give just enough time for the starch in the cereal to relax and the xanthan gum to start dancing again. The result should surprise you if this is your first experience .
What do I do with opened loaves? Refrigerator?
There are several schools.
- On the counter, in a plastic or cloth bag , the bread will easily keep for 4 to 5 days. It may dry out a little but once put in the toaster, the result is delicious.
- In the refrigerator, we thought for a long time that it didn't work. However, it keeps the bread moist. The xanthan gum and the starch tighten and the bread is no longer soft and has a salty cake texture. Once again, put back in the heat , the softness returns and the molecules start dancing again.
- For my part, I eat the sunflower and pumpkin bread straight out of the fridge. This texture, far from the bread we usually offer, suits me very well for quick snacks.
Do breads freeze?
Really good and above all for a very long time!
What we recommend is to slice the bread you want to keep and freeze it. All you have to do is take the slices out of the freezer with a small knife and put them directly in the toaster (sometimes you have to put them back to toast twice). It's very easy, very practical and above all very tasty!
What if I froze all the bread without slicing it?
It really doesn't matter. First of all, you can, if you wish, let it thaw on the counter and slice it to re-freeze. And yes! Since there are no animal products in our breads, there is no risk of bacteria or other inconveniences related to the cold chain .
However, if you want to eat it, you can choose:
- Let it defrost then put slices in the toaster
- Let it thaw then put it completely in the oven at 350°F for 15 to 20 minutes
- Put it frozen in the oven at 350°F for 20-25 minutes (The crust will then be very crispy )
- The last option comes to us from Claudia who has had great success with this method and has converted more than one:
"I take the bread out of the freezer and run it under running water. Then I put it in the oven at 350°F for 15-20 minutes. This is really how I find the crust is crispy but not too crisp and the crumb is as soft as you want."
Do I always have to heat my bread?
