There are four of us today at Citron confit: Gabrielle, Jean-Seb, Isa and me.
I met Gabrielle in August 2016 during my first trip to Quebec. It was love at first sight. I came back in October to settle in Rimouski, to work at the bakery. Gabrielle and I have things in common. I was pursuing a career in the business world, at the Paris Stock Exchange. Gabrielle was leaving a law firm. We had both decided to change our lives, change our pace, change our habits. We both did it by changing our diet. Taking the time to live also means taking the time to eat. To take the time to eat, it has to be a pleasure.
It's been two years now since the bakery project started. It's still early days. We've gone from an artisanal bakery to an online artisanal bakery. We defy borders with tasty breads that don't contain gluten. We defy distances with a home delivery service, everywhere in Quebec.
We learn new things every day. In cooking, of course, but also in management, in communication, in entrepreneurship. Entrepreneurship is an amazing experience. An experience that puts us face to face with ourselves. For better or for worse. It is an experience that challenges us, that questions us, but that always makes us grow.
So we learn a lot. For us, this knowledge acquired through experience is only good if it is shared. Whether it is culinary tips and tricks, tools set up or filters for posting photos on social networks, all this knowledge can be useful to everyone (according to each person's interests). This is why we offer a blog. To share what we experience and what excites us.
