Ah strawberries! Quebec's emblem of beautiful summer days.

We of course enjoy it as is, as a dessert (and in a daiquiri), but we rarely think of it as an aperitif. This bruschetta recipe is perfect as a starter and is quick to prepare. It is fresh, tasty, light, healthy and full of flavor. Something to please young and old alike!

Ingredients

  • 1 gluten-free candied lemon baguette
  • 1 cup strawberries
  • 1/2 cup cherry tomatoes
  • 1/2 cup cucumber
  • 1 French shallot
  • 2 tablespoons chopped basil
  • 2 tablespoons chopped parsley
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Preparation

  1. Preheat oven to 400F
  2. Slice the baguette (about 1cm thick)
  3. Grill in the oven for 5 to 7 minutes
  4. Dice strawberries, tomatoes and cucumber. Chop herbs. Place in a bowl.
  5. Add oil and vinegar to bowl. Add salt and pepper to taste.
  6. Garnish the baguette croutons with a spoonful of bruschetta and enjoy immediately!
