Thanksgiving is upon us and even if this celebration is more sober in Quebec than in the rest of Canada or in its American version, the fact remains that this long weekend is always a great opportunity to eat well (too much!). After all, we don't cook a turkey every day!
Who do you turn to when looking for a perfectly roasted and juicy turkey recipe? To our national Ricardo of course!
Except that Ricardo, even if he offers a range of recipes, each more varied than the last, does not specialize in recipes without gluten, without eggs, without dairy products or without nuts.
So sometimes we find ourselves in front of the list of ingredients and we wonder what we could replace everything with, without losing the taste!
Gabrielle took up the challenge and offers you an adapted version of Ricardo's apple and veal stuffing. A perfect seasonal recipe, with all the taste you'd expect from a recipe from Quebec's favorite chef, gluten-free and allergen-free! Plus, recipes featuring apples are a must in October... who else has 20 lbs of apples to consume before Christmas? 😜
Attention!When buying your turkey, choose a bird without seasonings. Butterball-style turkeys, in addition to containing salt and sugar, contain spices that are not listed and are not guaranteed to be free of cross-contamination, for example, with soy or nuts.
Ingredients :
- 2 cups diced baguette bread
- 250 g of semi-lean ground veal
- 3 apples, cut into pieces (it's time to use up that ton of apples you picked recently!)
- 1/3 cup sunflower seeds, toasted in a pan
- 1/4 cup apple must
- 1 flax egg (1 tablespoon ground flax seeds + 3 tablespoons water)
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
Preparation of the stuffing:
- Make your flax egg. Mix the ground flax seeds in the water and let sit for about 5 minutes
- Mix all the stuffing ingredients in a large bowl.

The ways to cook a turkey are quite traditional, but since we were inspired by his recipe to create our egg-free and gluten-free stuffing, we prefer to refer you directly to him, without copying him, for the rest!
Tips and tricks:
- Don't have a baguette on hand? While its crispy crust and soft crumb are perfect for stuffing, a baguette isn't the only bread you can use!
- The Bâtard and the 96, our all-purpose breads are just the ticket. The oatmeal loaf would go very well with the apple and why not try the cranberry bread? Let your imagination run wild!
- We offer a non-alcoholic version of the stuffing to please everyone. You can still use rum, apple brandy or calvados, as suggested in Ricardo's original recipe.
- If you want to replace the melted butter on the turkey to roast it well at the end of cooking, you can use the oil of your choice (olive, sunflower, canola) or more simply, the cooking juices from your poultry.
- Also take the opportunity to have fun with herbs! Turkey goes well with thyme, sage, rosemary or garlic. This is a good time to use the herbs you grew this summer!
