INGREDIENTS
2 pre-cooked Candied Lemon pizza doughs
Mushroom pesto:
1 ½ cups mushrooms of your choice
¼ cup toasted sunflower seeds
¼ cup olive oil
1 clove of garlic
Salt and pepper
Pizza toppings:
Cherry tomatoes
Fresh basil
Fresh Shiitake Mushrooms
Roasted sunflower seeds
PREPARATION
1. Preheat oven to 400ºF.
2. Place the sunflower seeds on a baking sheet and toast them (making sure they don't burn). The time can vary from 5 to 10 minutes depending on the oven.
3. Place the washed mushrooms, garlic clove and sunflower seeds in a food processor. Puree, keeping small pieces of sunflower seeds crunchy.
4. Slowly stir the olive oil into the mixture. Add salt and pepper to taste.
5. On a baking sheet, place the pre-cooked pizza dough. Cover the dough with mushroom pesto (keep the rest of the pesto for another recipe). Add quartered cherry tomatoes and shiitake mushrooms.
6. Bake for 12 to 15 minutes.
7. When it comes out of the oven, place fresh basil leaves and toasted sunflower seeds on the pizza.
8. Cut into small pieces and enjoy as appetizers (or for a meal).
