Caramel and muesli sundae: gluten-free, allergen-free and vegan!

Summer delight without the dangers!

More than a recipe, here is a delicious little tip to add flavor and crunch to your frozen desserts, while increasing their nutritional value: a few spoonfuls of muesli!

Since commercial vegan ice creams are usually very expensive and full of sugar, I wanted to offer you a homemade version, simple and economical, without allergens. No need for an ice cream maker, a food processor is enough. It's also a great anti-waste tip: too much fruit? Hop in the freezer!

I'm making a banana-vanilla ice cream here, but there are so many possibilities. I like to keep a creamy base thanks to the banana, but you can add other fruits or a little cocoa and maple syrup or spices like cinnamon or ginger. For a more gourmet side, I added a simple caramel sauce made with dates and coconut milk.

Ingredients vegan banana ice cream in a food processor

(for 3 generous portions)

  • 5 to 6 not too ripe bananas, frozen in pieces
  • a little vanilla
  • a food processor or blender

It's that simple...put the frozen bananas and vanilla in a food processor and pulse, in spurts at first, until the bananas have the consistency of a nice soft cream.

You can serve immediately or pour into a container that is not too deep and put in the freezer for an hour or two.

Here I poured some date caramel for a marbled effect and put it in the freezer for an hour before serving.

Ingredients

(for about 1 cup)

  • ¾ cup soft medjool dates (if the dates are drier, soak them in water)
  • ¾ cup coconut milk
  • ¼ teaspoon vanilla
  • pinch of salt

Preparation

  1. Mix all the caramel ingredients in a blender until you obtain a smooth texture.
  2. I like to let it sit for about fifteen minutes, the time for the dates to soften a little and I start the mixer again so that the caramel is even creamier.
  3. Pour into a jar and keep in the refrigerator.

Let's get creative. I opted for a breakfast sundae , with strawberries, banana, caramel and a good dose of date and chocolate muesli.
