First, we have an idea. We mix ingredients and know-how, with our desires and dreams. We then transform everything into a dough. We let this dough rise, quietly. This rest time, in a bustling kitchen, allows the aromas of the flours to develop and the dough to reach its mature size. Then comes the shaping time. This moment when the hands of artisan bakers transform an idea into shape, on a floured work surface. But it's during cooking that everything happens. A minute too early, and the bread is not cooked. A minute too late, and the bread is burnt. It's a goldsmith's work to create a company, but the result is, in the end, so satisfying ;)
The company: a challenge in itself
Master on board, we realize that freedom has a price. The challenges are often greater than we could have imagined...with doubts that constantly tickle our shoulders. The company requires skills that no school has yet been able to teach us. It is a balance to be achieved on a daily basis between flexibility and structure, between madness and rationality. The place where, in the end, we can express what we really are.
However, imprinting your dreams in matter remains a pleasure that is difficult to describe. A creative birth, the expression of your best, an infinite and beautiful path of personal development. It's a bit like eating a "real" baguette, but gluten-free ... when Citron confit did not yet exist.
Living in the region: The dream life
The living environment is gentle in our Bas-du-fleuve. The landscapes are enchanting. The river of course, but also the wooded or cultivated lands, where there is happiness in each season. The fauna is also beautiful and diverse. But, the best part, it is its humans, who take the time to live to the rhythm of the seasons with a taste for harmony very developed. Well of course, there is a little extra. A gluten-free artisanal bakery, which makes amazing crusty bread! There are not many others elsewhere.

But this quality of life comes with this distance from major centers. And who says distance, says delivery time. This is the major problem we encounter. It is difficult to have all the products we could use delivered (already without allergens, the list is thin!) at affordable prices. In addition, the solutions to the technical problems we encounter are difficult to find in the region, or even non-existent. Specific compostable packaging, specialized machine repairs, etc.
Fewer humans, but certainly not lower quality
The population is less dense here than in large centres. By default, there are fewer people affected by our niche products. However, there is a great team spirit and support for local businesses here (in Rimouski). Most of our customers are neither allergic nor intolerant, but they share our breads with pride and recognition of our unique know-how. By bringing a curry bread to a dinner, they will certainly not go unnoticed!
