Perfect Vegan French Toast: Gluten, egg and dairy free, but with so much flavor!

French toast is a breakfast classic. Tasty, sweet and quick to make, it’s a sure bet for weekend mornings! Recipe adapted many times to suit vegan and gluten-free/allergen-free diets, it’s no surprise that so many of you have asked us for a Preserved Lemon version!

A REALLY golden vegan French toast???

So it's not about reinventing the wheel, but I'm offering you a variation here that combines chia seeds and chickpea flour to obtain a texture and taste that is just as good as the original recipe!

And yes! If you follow the steps in my recipe carefully, your French toast will be truly golden!

I use bread 96 and I don't hesitate for a second to use the slightly "drier" slices of bread when I have some!

Ingredients

(For 6 large slices of bread 96 )

  • 1 cup unsweetened plant-based milk (this recipe was made with oat milk)
  • 1/4 cup chickpea flour
  • 1 tablespoon ground chia seeds
  • 2 tablespoons maple syrup
  • a pinch of salt
  • about 1/2 teaspoon vanilla
  • about 1/2 teaspoon cinnamon

  1. Whisk well (you can use the mixer arm to prevent the chickpea flour from forming lumps).
  2. Soak the slices for 2-3 minutes (yes, yes!) in the mixture so that the bread is well soaked.
  3. Cook over medium heat in an oiled pan. You have to wait a few minutes before trying to turn, until it has started to brown well, to prevent the bread from sticking to the pan.

Once your golden brown breads are nicely toasted, use your favorite toppings to accompany them!

Classic maple syrup or, why not, a homemade blueberry, chia and maple jam with a good dose of whipped coconut cream?

Use your imagination, pour yourself another nice hot coffee and enjoy your French toast without any second thoughts, because this vegan, gluten-free, egg-free and dairy-free recipe is safe, but full of flavor!
