Gluten-free pie crust

Pie crust is a basic recipe that lends itself to all kinds of recipes, from breakfast to dessert.

Pâtés, quiches, tarts... having a good dough recipe is essential for cooking meals and desserts that everyone loves and that are easy to stock up on (raise your hand, meal prep fans! 👋 ).

However, when you live with food allergies, food intolerances or celiac disease, it can be difficult to find the tasty, allergen-free ingredients you need to cook. And when you do find good ingredients, you then have to adapt a recipe or find one that fits your needs.

At the Citron confit bakery, we have tried more than one pie crust recipe to allow us to offer you delicious pastries. Here is a recipe for a shortcrust-style pie crust, to spread with your fingers.

Why doesn’t the Citron confit bakery sell pie crust in its online store?

At the moment, it is difficult to sell ready-made pie crusts because they would break in transit. If you have been a customer of the bakery for a while, you may have had the opportunity to order our gluten-free lemon tarts . They are no longer offered for the same reason: it broke our hearts to see broken pies arrive in your home!

Gluten-free pie crust

Preparation time: 10 minutes

Servings or yield: makes 2 pie crusts

Gluten-free pie crusts can be frozen , either directly in the pie plates or in balls, individually wrapped. They will keep for a few weeks to a few months, depending on how they were wrapped, in the freezer.

This recipe is:

  • Gluten free
  • Dairy free
  • Peanut free
  • Nut free
  • Without eggs
  • Soy free
  • Without sesame
  • Without mustard
  • Without fish
  • Without seafood
  • Vegan / vegan

Ingredients

  • 2 1/4 cups all-purpose gluten-free flour blend
  • 1/4 teaspoon salt
  • 1/2 teaspoon of guar gum (you can also substitute with xanthan gum if you have, for example, an allergy or intolerance to legumes)
  • 3/4 cup of vegetable butter (for example: Earth balance)
  • 6 tablespoons ice water

Preparation

  1. In the bowl of a stand mixer (using the paddle attachment), sift together the flour, salt and guar gum.
  2. Add the vegetable butter and mix until you obtain a sandy dough.
  3. Add the water to the sandy mixture and mix at minimum speed. Form a ball with the dough and divide it into two equal portions. The dough is now ready to use!

To roll your gluten-free shortcrust pastry

Shortcrust pastry dough can be difficult to roll with a traditional rolling pin and may crumble.

We therefore recommend that you roll it out by hand, directly into your pie crust. If you still want to use a rolling pin, here is the method that will give the best results:

  1. Place a sheet of wax paper on your work surface and sprinkle with flour
  2. Flatten the dough on the paper with your hands
  3. Dust the dough with flour and cover with another sheet of wax paper.
  4. Use your rolling pin to achieve the desired size and thickness.
  5. Carefully remove the top wax paper
  6. Using the wax paper, turn your pie dough out onto your plate and finish spreading it with your fingers.

With its neutral taste, it is ideal for quiches (try scrambled tofu to replace eggs!), pâtés, pies and desserts. Let your imagination run wild!
